I.U.B.: 1.1.1.1 Alcohol dehydrogenase derived from yeast is a metalloenzyme containing four tightly bound zinc atoms per molecule (Vallee and Hoch, Proc. Natl. Acad. Sci. USA, 41, 327, 1955). The optimum pH for the enzymatic oxidation of ethanol is 8.6-9.0 and is closer to 7.0 for the reduction of acetaldehyde. Stability/Storage: Stable 3-5 months at 2-8°C. Unit Definition: One Unit reduces one micromole of NAD per minute at 25°C, pH 8.8.
